Yes. Open the form, click the avatar stack in the top-right corner, and set that person to Viewer (read-only) or No access (the form disappears from their dashboard entirely). Owners, admins, and the form's creator can't be restricted this way.

Yes — the dashboard's Charts tab lets you build bar, line, area, or pie charts from any form's responses. Charts are saved and shared with your whole team, and follow the same access rules as the form they're built from.
